Middle eastern meatballs with cumin tomato sauce :
I I have a soft spot for middle eastern food and need a fix once in a while.
Mix about a pound of ground meat with chopped onion, minced garlic, breadcrumbs, egg, cumin, sumac, oregano, parsley + salt. Sear all sides of meatball in skillet until brown and set aside. Use the same skillet, scoop out oil until you are left with about a tablespoon, add chopped onion, minced garlic and cook until soft. Add cumin, passata (or tomato paste thinned out in broth) , salt + pepper and simmer until right before it burns. Add broth / stock, simmer further, taste and when all the flavors come through, add back meatballs, cover and simmer for about 15min. Sprinkle cilantro and / or chives on top just because that's prettier, and serve!

Very nice. I have made something similar but added bulghur wheat to the meatballs and the sauce was yogurt based.

Perfect I think that's about what I have.

About how much passata did you use. I have a jar that I need to use up. Plus everything else you mentioned, on hand.

Hi Ash, I think I dumped about 1/2cup. I just wanted to empty the bottle so used up all I had. If I had more and want to make it more tomato-y, I'd adjust to less broth. I didn't want the meatballs swimming in broth so I filled up liquid to just about half the height of meatballs
