Tagliatelle with pancetta, spinach and Gorgonzola! Cook the pancetta in a pan, then as the pasta is cooking wilt the spinach in the frying pan, stirring together, then add Gorgonzola and a splash of pasta water to make a silky sauce. Stir together and season. Finally season and add the tagliatelle to the pan with all the ingredients and combine. Serve with extra Parmesan if you want.
