Beef Chuck Roast
Season meat generously w/salt & pepper then sear meat in 1.5 T oil on high heat. Put meat on top of veggies-celery, carrots, onions in roasting pan. (Couldn't resist pretty purple onions from local market stand!) Pour beef broth in roaster & toss in a couple bay leaves & garlic cloves. Cover & roast 2.5 to 3 hours at 350F. When done, strain pan juices into a bowl. Melt 4T butter & whisk in 1/4 C flour, then gradually whisk in pan juices. Simmer then add some fresh lemon juice & couple dashes hot pepper sauce along with s/p to taste.
