Before making ragu the other day, I reserved a small chunk of pork shoulder to make larb.

Shallots, scallions, basil, lemongrass, thinly sliced. Ground, toasted rice, powdered ginger, chili flakes. Dressed with lime juice, fish sauce, and stock.
