Eggplant parmigiana

Sliced eggplant, lightly breaded
Goat cheese/Creme Fraiche/Romano/thyme filling
Tomato sauce
Mozzarella and fresh basil topping

Slice, salt and rinse eggplant. Egg and seasoned breadcrumb coating, bake on half sheet until soft.

Layer eggplant, cheese and tomato sauce. Top with Mozzarella and basil. Bake for 30 mins,
