My standard gravy for most of my North Indian dishes consists of 1 large onion, 1-2 cloves of garlic, fresh ginger, 1-2 green chile, coriander, cumin, cardamom, cinnamon and cloves. Blend into a thick paste. Fry this paste in a mix of butter and oil until all the moisture evaporates, then add tomato purée, turmeric and salt. At this point, the world is yours for infinite possibilities of (not)recipes, cooked lentils, canned garbanzos, beans, vegetables, tubers, this batch for today's dinner had a mix of baby kale, grilled paneer and fresh cranberry beans
