Melon jam with star anise:
Add roughly chopped melon pieces and sugar to a pot and cook covered until the fruit has softened, 5-6 mins.
Using a potato masher, push down on the melon pieces until they are completely pulpy.
Add lemon juice, a pinch of salt, and a few star anise and continue to cook, stirring frequently until the jam has thickened, about 10-15 mins.
Once cooked, ladle into glass jars and refrigerate.
