Somewhere in the neighborhood of a clear-out-the-fridge veggie tikka masala. With the exception of the frozen peas added last minute, all other veggies are roasted at 425 with olive oil, salt, and pepper before being added to the meal. We always eat this with basmati rice and warmed up naan brushed with butter.
