Kitchen sink zucchini bake: sauté whatever protein and veggies are on hand (for me, chicken, garlic, basil and tomatoes); stir in something saucy (big can of diced tomatoes - doing double duty from above- and leftover ricotta), simmer while you thinly slice 2-3 zucchs. Then layer them on top, sprinkle with cheese and bake at 375 for about 30 min or until zucchinis are tender and cheese is toasty.
