Skillet Zucchini and Potato. I used a skillet for this but it can be easily done in the oven. Cooked roughly cut potato with garlic cloves cut in half, took it out and then did zucchinis. Key is to leave veggies in a hot skillet and not touch it for several minutes until the sides are golden. This way, food doesn't get stuck. Add fresh thyme just before removing from skillet, sprinkle salt & pepper and serve warm.
