The cool weather is here and I am so exited to be able to use my oven again without turning my house into a furnace. Simple cast iron pan chicken thigh (salt, pepper, garlic) on a spicy cauliflower rice (I made a paste of jalapeño, cilantro, onion and garlic which I threw in the pan to add some flavor and heat). To brighten up the meal a simple green salad with a sunflower seed oil, lemon and Dijon dressing and with raw sunflower seeds and shaved Parmesan tossed in as well. Filling and delicious! Had to stop myself from eating the skin off all the remaining thighs!
