Massage kale with olive oil. Add cooked quinoa, lightly sautéed bell peppers, tomatoes, and salt and pepper to taste, and mix all the ingredients. Top with your favorite shaved cheese (I used Trader Joe's Parmesan, Romano, and Asiago cheese blend).
