A speedy riff on one of my favorite salads -- the #genius Northern Spy salad.
Instead of roasting the squash, I shaved it into thin ribbons using a serrated vegetable peeler. And instead of kale, I massaged broccoli rabe leaves. The lemon juice and olive oil nicely soften the raw squash and rabe -- and tame the bitterness of the leaves. From there, I added a little sherry vinegar, shaved apple for sweetness, and the original recipe's almonds and aged cheddar.
