Fermented green tomatoes for Christmas. Layer green tomatoes + bell peppers + yellow chiles + garlic + fennel seed + kosher salt until crock is full. Weight down with brick and cover with towel. Place in garage and wait till Christmas.

If i remember correctly it is a bay leaf or two, salt, white vinegar, whole pepper, whole allspice, and crushed red pepper.

I bet lots of people around the. Mediterranean do something similar. I'm told you have to make sure there is no pink at all in the tomatoes. If you see any color changing inside the tomato don't use it. I don't know why but that's what I'm told. Best of luck!

Thanks. My Italian great uncles made these every year and they're a Christmas favorite. Gotta carry on the tradition. When ready, rinse well, pat dry and toss in olive oil.
