Cauliflower mash, so simple and a great alternative for potatoes. Cauliflower, cream, butter, Comte cheese grated, salt and pepper. Boil or steam cauliflower until tender, remove from water and spread on baking sheet and let dry in 200 degree oven for 45 minutes. Puree in blender or food processor, add softened butter, hot cream and grated Comte or gruyere. Serve hot as you would mashed potatoes. You can add roasted garlic, sprinkle with chives use creme fraiche or sour cream instead of cream so many possibilities.#notrecipe
