It all starts with a roux! Crawfish and burrata on a chickpea pancake. I made a basic roux, added some Worcestershire, hot sauce, thyme, smoked paprika, and the crawfish. Meanwhile I made a chickpea pancake (equal parts chickpea flour and water, plus baking powder), spread some burrata on top and put it under the grill. When everyone was hot and happy, I piled the crawfish on top with more hot sauce.
