Stuffed acorn squash
Cut acorn squash in half and scoop out guts. Bake at 400 until tender, but not completely done. While squash cooks, cook quinoa/barley/grain mixture, brown sausage, and caramelize onion. Mix everything together and fold in greens. Take squash out of the oven and pack mixture into cavity. Bake squash with filling until flesh is tender. Finish with drizzle of maple syrup and sprinkle of sea salt.
