Loaded quiche with bagel crumb crust… blitzed bagel chips into crumbs, crisped in skillet with bacon grease, smoked salt, pepper, chili flakes, nutmeg… pressed into dish with grated smoked Gouda… baked at 350 for 10 min, set aside.
Sautéed mushrooms with thyme, s/p, splash liquid aminos… sautéed red peppers with garlic, s/p… whisked spoonful mayo/spoonful Greek yogurt with a splash of water, added smoked paprika, chili flakes, whisked in 6 eggs.
Layered into crust: cherry tomato halves, shredded Gouda, pancetta/coppa, torn spinach, mushrooms, peppers, scallions. Poured egg mixture over veggies and topped with more meats/cheese and a sprinkling of bagel crumbs.
Baked for 40 minutes, added more shredded cheese and set to broil for 5 min.
Let cool, slice and serve with tomato jam from last post.
