Balsamic roasted Ramp and Onions (with roast beef) :
The sweetness of balsamic vinegar melts into onions when roasted.
Chop up ramp and onions. toss with balsamic vinegar, olive oil and some salt. Roast slowly at around 370F / 190c for about an hour or until done. If not serving immediately, keep it covered so it doesn't dry out. Goes well with roasted pork or beef.
