Granola on a cold and windy fall day. A few cups of good quality rolled oats, a few handfuls of pumpkin seeds, almonds, and flaked coconut, 1/2 a cup each of maple syrup, dk brown sugar, and coconut oil, 1 egg white a dash of salt and splash of vanilla extract. Bake at 350° for 30-40 minutes, tossing every 10-15 minutes or so.

Sometimes I use spices-cardamom, ginger, clove and cinnamon...However I'm feeling. Such a flexible thing to make.
