Butternut squash and heirloom tomato - the perfect summer-to-fall soup. I started with mirepoix, added lots of garlic and some hot pepper flakes, then already-cooked butternut squash and small heirloom tomatoes. I cooked everything in chicken stock, then blended in some cream at the end. I topped it with pepper jack cheese and toasted squash seeds.
