Butternut Squash with sage-brown butter and honey! Roast the squash (cut in rounds) in a hot oven (like 425F) with some olive oil and salt. Then heat a few tablespoons of butter on the stove and brown with a few sage leaves (warning: a little goes a long way-it's strong). Then removed from stove and mix in a heaping spoonful of honey. Coat squash after done in the oven (but still warm/hot). Optional: hazelnuts, pine nuts on top to add some crunch!
