Sweet potato and bay leaf tian. It's a variation of my brown butter-roasted sweet potatoes on @food52 (see link). To make the tian, thinly slice the potatoes (a mandoline is your best friend here) and toss with brown butter, herbs, shallots, and a few tablespoons of brown sugar. Arrange in cast-iron skillet, and tuck fresh bay leaves (8 to 10) among the sweet potatoes. Roast, covered, for about 45 minutes at 400 degrees, then uncovered for about 20 minutes longer.
