Sweet Potato and Apple Soup
Warm and comfy sweet potato soup courtesy of the autumn garden.
Into a slow cooker set for 6 hours on high: 32 oz water, peeled and chopped three pounds Yellow Jersey sweet potatoes, cored and chopped one pound gala apples, peeled and chopped shallots and onion, a couple fresh bay leaves and sea salt. When finished cooking, removed bay leaves then carefully blend remaining ingredients until velvety smooth. Topped with roasted Okinawan purple sweet potatoes, chive and parsley. Enjoy!
