Mushroom farro soup (gratin? Casserole?). I had leftover soup, but the farro drank up almost all the stock overnight! I tossed it with some cheese (pepper jack, but you could use anything melty)--then topped with more cheese and put it in the oven. I also added sautéed zucchini, lentils and bacon--but these are incidental--mostly added because I needed to use them. It's more about the concept. Leftover soup=tomorrow's casserole. #leftovers
