Pears with Caramel - Peel and core Bosc pears. Put in skillet cut-side down. Add water, sugar, vanilla, and lemon juice. Bring to boil, cover, lower flame to medium and cook until pears are soft. Remove pears to a gratin dish and cook liquid until it turns caramel colored. Add cream and stir to make a smooth sauce. Pour sauce over pears and cool to room temperature. Place pears on individual plates, stir pear brandy into sauce and spoon onto pears. Sprinkle with chopped pistachios.
