Cleaned out the fridge for breakfast! Heat the pan, add oil, toss in minced garlic, then frozen veggies (better if you have fresh veggies and cut them them!), flood the pan with some canned chopped tomatoes, season (I used some taco seasoning, a little salt, a little peppa) then once it bubbles, crack some eggs over it, cover and lower the heat. Add some spinach or whatever for toppings, I love black sesame seeds because they instantly make a dish look waaay better! When the egg looks cooked the way you like it, serve with some toast so you can dip them in this... whatever this is.
