This was a really simple risotto to make. I was using up leftovers and clearing out the fridge so I just used onion and leek and softened these up in the pan before coating the risotto grains in oil, I then added some white wine and let this evaporate before adding vegetable or chicken stock, once the risotto is half cooked I threw in the mushrooms and then right at the end added some leftover chicken from a Sunday roast and stirred it in along with some Parmesan, you can also add creme fraiche if you want - tasted delicious!
