Eggplant Gratin. I thought the eggplant from my garden was finished a few weeks ago! It wasn't! It yeilded enough this week to make this gratin. Brush eggplant slices with olive oil. Grill or saute on a non stick pan on both sides until soft and brown. Layer eggplant on a casserole dish or gratin dish. Sprinkle with grated parmesan/romano/asiago cheese. Sprinke next with finely chopped fresh basil and thyme..Cover with a thin layer of marinara sauce. Add a second layer of eggplant. Sprinkle with more grated cheese, herbs and marinara. Then flood the top with a mixture of fresh ricotta cheese, eggs, half and half, grated parmesan, romano and asiago cheese. Bake @ 400 for 40 minutes. Heaven on earth ❤️
