I call this rainbow rice. Sauté a red onion and rainbow chard stalks with the flesh and skin of chopped preserved lemon in some olive oil. When soft, add chopped chard leaves, canned chickpeas and rice. Top with chicken stock and steam the rice. Then stir in a bunch of chopped dill. Dollop with yoghurt. Sprinkle with almonds. Eat.
