Fridge-clearing veggie curry! Sauté chopped onion in 1 tbsp coconut oil and pinch of salt until soft. Add minced ginger and garlic, then add peppers, eggplant, or any other veg on hand. Cook for a few minutes then add 2-3 tbsp green (or red) curry paste. Stir to coat then add a can of coconut milk, ribboned kale, and some water. Simmer until veggies are cooked to your liking then add a few tsp of rice vinegar and a few tbsp of soy sauce and/or fish sauce.
