// Cauliflower + Celery Root Soup with Fried Sage and Sunflower //
A clean, creamy comfort for a dreary, drizzly day.
Cook chopped onions and leeks in a little oil but don't brown them. Add a couple of garlic cloves, a chopped head of cauliflower, a whole cubed celery root, some vegetable stock and simmer until soft.
Blitz until smooth and dilute with almond milk or cream.
Pan fry some sage leaves in a little olive oil and add sunflower seeds and salt when the leaves are crisp and crumbly. Top soup with seed and herb mixture and drizzle with leftover warm sage-infused oil.
Good on its own but you could enjoy with some sourdough, toasted until it's a little bit too charred. Maybe go for a grilled cheese with apple slices. Or just keep it simple and add a soft boiled egg.
