Tea is food! I love oolongs for their depth of character and the fact that they hold up to multiple infusions. Put a teaspoon or two of oolong tea in your small clay teapot, do a rinse with water that's just under boiling to 'awaken' the leaves. After 30 seconds, pour off water, then pour more hot water over the leaves. Steep 4-5 minutes. Sip from a tiny tea bowl, alone or with a friend. Steep up to 8 times!
