Apple cinnamon pancakes // pancakes: warm 1/2 cup milk with 2.5 tbsp of butter in saucepan, remove from heat when melted. Whisk one egg and temper with milk-butter mixture. Mix together in separate bowl, 1/2 cup + 2 tbsp flour, 1 teaspoon baking powder, 1/2 tbsp sugar, 1/4 tsp salt. Mix in wet ingredients till combined. Heat pan to medium, add butter to hot pan and pour in batter to desired pancake size, flip when edges bubble. Apples: chop one apple into 1/4 inch cubes, heat pan to medium high, add tbsp of butter to pan till melted, add apples, 1/4 tsp of cinnamon, and 2 tbsp of brown sugar to pan, stir occasionally till apples are browned and fork tender.
