Leftover empanada discos + apple surplus = apple pie empanadas!
Peel, core and chop some apples (about 4 apples.) Cook in microwave until tender but not mushy. Let cool. Drain off liquid.
Mix together a teaspoon of flour, a 1/4 teaspoon cinnamon, and a pinch of nutmeg. Stir into apples. Place 2 tablespoons onto each disk of empanada dough. Top with a small piece of cheddar. Seal empanada. Brush with cream and sprinkle with sparkling sugar. Bake in a preheated 450 degree oven for 15 to 20 minutes.
Makes about 6 empanadas.
