This is a recipe passed down from grandmothers, mothers and aunts.
Matmool. A shortbread type cookie filled with nuts. These are filled with a combination of walnuts and pistachios. They can also be filled with dates.
Flour, rendered butter, conf. Sugar, milk, egg. The nuts are flavored with sugar and orange blossom.

Lisa, just thought of something. Go to syriancooking.com There are many great recipes there. Some differences as different regions cook differently much like Italy, but you will get the basics and you can play around with the recipes as you wish.

Would Indian ghee work as rendered butter?

Ghee is the same thing as samna which is what is often used to makes mamoul depending on what family is making them. These look great.

It was my spelling. Google, maamoul cookies or syrian cookies for other recipes. They are typically made in a cookie press. My mother used to shape them with her hand and use a specific tool to imprint the design. You could just shape them by hand with no design.
