Cauliflower leek soup - sautéd celery, lots of leeks, and garlic, then added chicken stock, cauliflower, thyme, bay leaves, and a parmesan rind. Simmered until the cauliflower was tender, took out the rind, then blended until smooth. Topped with toasted breadcrumbs.
