This is a tasty midweek meal with no fuss! Heat the oven to 180 degrees, prepare the chicken with some olive oil, salt, pepper and then spoon on some wholegrain mustard (or use Dijon), pour a little wine over it too. Place in the oven for 25 minutes. Whilst the chicken is cooking, peel, quarter and cook the potatoes for mash and prep the veg. 5 minutes before the chicken is ready, steam the kale and get the mash ready. Take the chicken out of the oven and serve, add a little water or wine to deglaze the hot chicken dish and a spoonful of creme fraiche and mix to make a creamy sauce to serve!
