All this was missing was a poached egg on top. Too bad I can't really eat eggs anymore! Super quick and delicious, inspired by the sister's dinner last weekend. Sautéed mushrooms, cooked with beef stock, fresh thyme sprigs, salt and pepper, and a bit of beurre manié. Served over toast, with a side of sautéed green beans. Perfect with a glass of red wine, and on a chilly fall night.
