One of my essential (not)recipes: thin zucchini pancakes. Grated zucchini, eggs, flour, salt, pepper, whatever herbs feel good at the moment (I used the end of some green goddess dressing), mixed til it's a thick batter. Spread very thinly on a hot oiled pan and cooked til golden on both sides.
Delicious plain, or as a base for any number of sauce or leftovers. One of my favorites: sweet chili sauce and parmesan.
