Frittata for One
Cooked & crumbled turkey sausage, thin asparagus, egg whites.
Heat the sausage crumbles in a non stick skillet add a handful of thin asparagus spears cook for 2-3 minutes add egg whites cover and cook over med-low heat until cooked through. Drizzle with hollandaise sauce.
Hollandaise: in a double boiler 1 egg yolk, 1 Tbsp butter, 1 Tbsp hot water, 1 tsp lemon juice, sea salt. Whisk constantly until thickened.
