Butternut squash soup: Halve and then slice 1 whole onion; caramelize onion in olive oil; toast cumin seed and coriander seed; add to onion with pimentos; halve and roast one butternut squash; add broth or water; blend and season to taste with salt and pepper. Garnish with sautéed crimini mushrooms and parsley.
