Fall Apple Pie

3 C flour
1/3 C shortening
12 T very cold butter
1 T sugar
1 t salt
1/2 C ice water

6-7 large apples (I used 5 Honeycrisp and 2 Granny Smith)
2 T butter
3/4 C sugar
1/2 t cinnamon
1/4 t salt
2 T flour
2 t cornstarch
1 T lemon juice

Chill dough for 30 + minutes while prepping apples/filling. Peel and thin slice apples, sauté in butter, slow simmer w sugar and spices for 5 min. Add flour and cornstarch. Cook for 1-2 more min. Take off of heat. Add fresh lemon juice and cool completely before filling pie. Cut dough into 2 equal pieces for top and bottom crusts. Roll each 1/8" thick. Once pie is assembled, egg wash pie crust and bake at 400 degrees until crust is golden and filling is bubbling. Cool completely before serving.
