Fried anchovies with curry leaves:

Marinate anchovy fillets in minced ginger, minced garlic, chilli powder, turmeric powder and salt for several hours or overnight.

Heat coconut oil, for deep-frying. Dredge the anchovies in a mixture of semolina and rice flour before dropping them into the oil. Fry in batches. Afterward, fry curry leaves in the oil and scrunch them up in your hands to use them as garnish for the fried fish. Serve with lemon wedges on the side.
