Leek frittata...sweat leeks in coconut oil/butter until tender, 10-12 min.
Whisk eggs (6-8) with fresh herbs (thyme), add soft cheese (goat, Brie, mild blue). Add leeks.
Add egg mixture to pan, cook until edges are set, 5 min. Bake in 350 oven for 5-10 min until cooked through.
