Chicken Tagine.. Spicy, soulful; a little bit French and a whole lotta North African. Season chicken thighs with blend of paprika, ginger, garlic powder, cinnamon, coriander, turmeric, cardamom, salt and pepper! Sear in a Dutch oven; 3-4 minutes each side. Remove chicken from pot and sauté chopped onion, carrot and celery until soft. Add minced garlic and minced fresh ginger and a pinch of saffron, sautéing until fragrant. Add chicken back to pot, skin side up. Add 2 tablespoons tomato paste and 2-3 cups of chicken stock, halfway up chicken. Cover and cook over low heat for 20 minutes. Add chopped tomatoes (I used canned) dried apricots, olives and 2-3 tablespoons preserved lemon simmer for 20 minutes.
