The first of many pumpkin pies! I found an old can of organic pumpkin and evaporated milk in my pantry...so made a pie.
Pumpkin, evaporated milk, eggs, sugar, a pinch of salt and the usual spice suspects-cinnamon, ginger, nutmeg, allspice, mace and cloves. Defrosted a pie crust I had made, poured in the yummy mixtures and baked it at 375 F for about 50 minutes. Covered the edge of the crust after 20 minutes so it would not burn. The smell makes you want to stay in your PJ's all day and nibble on pie.
