closing out an epic food weekend with a curry-spiced, slow-braised goat leg and homemade naan.
i officially fell in love with goat meat this summer. it's a very lean source of protein, with lots of flavor, and i can get it locally sourced. tonight's braise was built with curry powder, carrots, onions, celery, garlic, fresh ginger, fresh thyme, fresh curry leaves, a little tomato paste, and beef stock. let it do its thing for two hours and 45 minutes in a 325-degree oven, and the meat falls apart with the most gentle poke.
