Pumpkin Gingerbread Popcorn… preheat oven to 300… pop 1/2 c popcorn kernels… in small saucepan, add 3 oz coconut oil, 1/4 c brown sugar, 1/8 c light corn syrup, 1/8 c molasses, 1/2 tsp pumpkin pie spices, pinch salt, pinch espresso powder… stir over medium heat, let boil 3 minutes without stirring. Turn off heat, add 1/2 tsp baking soda, 1/4 tsp cream of tartar, splash pumpkin extract, stir… pour over popcorn, mix. Bake for 30 minutes, stirring halfway through.
