This is an Oxtail Barquette. The list of ingredients is long but it has equal portions of Chinese and Mexican elements. I financed this interchange between Chef Nancy León and Timothy Pakron and Betty Liu. Nancy created the recipe and then Tim and Betty did remixes of it for their pages.
